How do we make sure the bride or groom pays nothing?

Either leave them out of the group or don't select them as a participant in the expenses. Their share is spread over everyone else automatically.

One person booked the stay and activities in advance. How do they get the money back?

They add the bookings as their expenses. Split shows right away how much the others owe them. With bank details or a PayPal link saved, the others can pay them straight away.

Not everyone joins every activity. What then?

Pick the people who were there for each expense. Whoever only arrives for the evening doesn't pay for the go-karting in the afternoon.
