How many people fit in a group?
As many as you need. Anyone added before the trip simply takes over their place when they join by link.
How do we handle excursions that only some people join?
Add the excursion as its own expense and pick only those who took part. You don't need a separate group per excursion.
How many transfers are needed at the end?
Split suggests as few as possible. With ten people it's usually no more than nine, often far fewer.
